Potato Medley Salad

2-3 Potatoes
1 large Orange Sweet Potato or Yam
Olive Oil
Salt & Pepper
6-8 Bacon Slices, cooked and crumbled
Pine Nuts, lightly toasted
Cherry Tomatoes
Habibi’s Basil Garlic Hummus

Preheat oven to 400. Wash and peel potatoes, cube. Toss in olive oil, salt and pepper and spread evenly out on baking sheet. Roast for 35-40 minutes until golden & tender.

Let cool slightly. Toss potato medley with bacon crumbles, toasted pine nuts, diced cherry tomatoes and Habibi’s Basil Hummus.
